* HOLIDAYS * -- Here is how we prepare our large turkey sized chickens --

Subject: How to Cook a Holiday Bird (ten to 15+ pounds)

Make sure thawed completely... salt water soak bird for half hour or bypass that step and just rinse off

Salt inside and outside of bird then season as you like... we season with onion powder, garlic powder, poultry seasoning, black pepper

Stuff it if you choose with whatever stuffing you want....

Place pieces of foil over the tips of drumsticks and wings Pat the chicken with butter if you want at this point...

Make sure that it is covered tightly after spraying the foil with oil so it doesnt stick

Place bird in oven after pre-heating

First hour and a half at 400F degrees after that remove the foil and baste the bird... add a cup of water if not enough drippings... you can use a bouillon if you prefer

Re-cover the bird and set at 375 degrees until done, with basting every hour...

Figure on 20 minutes per pound cooking time but every oven is different....

Internal temperature in breast part of bird should be 175-180F degrees

Let it stand and cool for fifteen minutes before carving
